Glycine max 'Hokkai Green' BIO is an organically grown soybean that is particularly popular among edamame lovers, the popular Japanese delicacy. This variety is known for its excellent flavor, thicker beans, and vigorous growth. Although 'Hokkai Green' ripens about seven days later than the 'Green Shell' variety, it produces noticeably higher quality, making it a perfect choice for both home gardeners and professional growers.
With its sturdy plants, uniform pod development, and high yield, 'Hokkai Green' is among the best soybean varieties for cultivation in temperate climates. The fact that this variety is organically certified makes it particularly attractive to sustainable growers and anyone who consciously wants to enjoy truly fresh edamame.
The gracefully growing Hokkai Green plants produce thick, full pods that are ideal for preparing edamame. The flavor is exceptionally rich and sweet, making this variety a clear standout among others.
The plants are vigorous and healthy, allowing them to establish quickly in open ground. They are ready to harvest as soon as the pods are fully filled—usually from mid- to late August, depending on sowing time and growing conditions.

'Hokkai Green' beans are typically used for edamame, a popular snack in Asian cuisine. Preparation is simple:
The pods are cooked in boiling water,
Then lightly salted,
And then served immediately.
Note: The pods themselves are not eaten – only the beans. Cooked beans can be squeezed out of the pod and eaten as a snack, side dish, or salad ingredient. 'Hokkai Green' is also excellent for freezing, allowing you to enjoy your harvest for a long time.
Because soybeans need warmth to grow well, it's important to sow at the right time. There are two cultivation methods:
Start indoors in early April.
Sow 2 seeds per pot.
Maintain a warm environment of approximately 25 °C.
Planting out can take place as soon as there is no more night frost.
From mid-May, as soon as the soil has warmed up well.
Sow with 10 cm between the plants in the row.
Keep 50 cm between the rows.
Average planting distance: 40 × 25 cm.
A sunny, warm location gives the best yield.
Depending on the sowing and planting time, the harvest can take place from mid to late August.
Soybeans like 'Hokkai Green' thrive in warmth and should be placed in a sheltered, sunny spot. Provide plenty of water during prolonged dry spells, especially during fruit set.
Be careful when fertilizing: don't overfeed. Over-fertilization leads to weak, lush growth, which prevents plants from remaining firm and can result in lower yields. A lightly fertile soil is ideal.
Furthermore, soybeans are relatively low-maintenance and are rarely affected by diseases, especially when grown organically and in healthy soil.
