Who says beets always have to be red? Avalanche is an interesting alternative in the garden and on the plate, and can be grown and prepared in the same way as the red varieties.
The white beets can also be eaten raw when young and have a finer and sweeter taste than the red varieties.
Beets can be grown in clumps and require well-maintained garden soil that has not been recently fertilised and even moisture.
Beetroot should be sown directly, as it does not tolerate transplanting. Sow from April to July in open ground; sow thinly in rows, 25–40 cm apart for beets, approximately 10 cm apart within the row, or singly, as a lettuce, 15–20 cm apart, 10 cm apart within the row. After germination, thin out to one seedling per spot. Beets are harvested approximately 60–70 days after sowing.
