Allium ursinum, better known as wild garlic, is a special and versatile wild allium species that has been known since 1753. This plant occurs naturally in large parts of the Northern Hemisphere and grows primarily in damp, shady forests and along streams. In the Netherlands, wild garlic is present in the wild in various locations and is considered a protected stinzen plant. The plant forms broad, oval green leaves that strongly resemble those of the Lily of the Valley. The leaves appear early in spring and, when bruised, release a distinct onion and garlic scent. The flower stalk is strikingly triangular and bears a hemispherical inflorescence with countless white, star-shaped flowers. The taste is reminiscent of mild garlic and is often used in soups, pestos, salads, and herb butter. Additionally, wild garlic is traditionally valued for its alleged cholesterol-lowering effect. The name “daslook” refers to wild animals such as badgers, which enjoy eating the plant after their hibernation.
This allium grows best in moist, humus-rich soil in partial shade or shady conditions. Under favorable conditions, the plant naturalizes easily and can quickly spread into large carpets of fresh green foliage and white flowers. This makes wild garlic highly suitable for natural woodland gardens and stinzen plantings.
